Plant Burger – a la Plant Cafe

Serves 6.

3 small beets, peeled and chopped (222 grams) – buy already cooked from Trader Joe’s or roast 20 minutes at 400° F or use about 1/2 can beets
1/2 cup green lentils
1/2 cup bulgur wheat
1/3 cup raw cashews
1 cup mushrooms (I like shitake)
1/2 cup minced yellow onion (I like white)
1 tsp fresh thyme
salt, pepper
canola oil

Cook lentils in 1.5 c water until tender (about 30 min).
Boil 1/2 c water.  Add bulgur, turn off heat, cover for 10 minutes.  Bulgur absorbs water.
Cook minced onion, mushrooms and thyme in 1 tsp (or more) oil for about 6 mintes until softened.
Put cashews in food processor and process until they’re like flour.
Add beets, bulgur, onions, mushrooms, and process.
Add lentils and process until “chunky”.

Fry in oil.  They tend to be a little moist but quite Delish!  OR, bake in a Pam-sprayed bread pan at 350° F for 35-40 minutes for a “meat” loaf. The “meat” loaf is even better than the burger.

Serve on toasted bread with all the fixings.
