Use cast iron skillet or stir fry wok.
Serves 4
1/3 cup butter
4 eggs
1 tsp sugar
1 cup milk
1 cup flour
vanilla & lemon peel (optional)
Place butter in pan and set in 425°F oven. Place remaining ingredients in blender or food processor. Blend for 30 seconds. Bake 20-25 minutes until pancake fluffs up.
Serve with fuit and/or powdered sugar. Warm peaches are yummy!
