Cornbread – plant-based

1 1/4 c cormeal or masa harina
1 c flour
1/3 c sugar (cane sugar) – just the right level of sweetness
5 Tbsp canola oil (or melted vegan butter)
1 c soy or almond milk
1 Tbsp baking powder
1/2 tsp salt (optional)
1 c corn kernels (frozen or fresh)

400° F oven; spray 8″ x 8″ pan with Pam (or lightly grease it)
Mix everything except for corn kernels together in a bowl.
Don’t overmix. Add corn at the end, stir 2 or 3 times just to mix in.
Spread evenly and bake 20-25 min. Test with a toothpick for doneness.
Eat. Yummy!
