First made 4 July 2015 – original quantities could be more precise
1 bag frozen fire roasted corn (could use 8 ears fresh and grill them yourself, then cut kernels off)
1 c. diced red bell pepper (or use 1 red bell pepper)
1 c. diced green bell pepper (or 1 green bell pepper)
1 c. chopped red onion (or 1 red onion)
1 c. chopped cilantro
1/2 c. olive oil
4 cloves garlic minced
1/2 c. lime juice (3 limes, juiced)
1 tsp sugar
salt and pepper to taste
1 Tbsp hot sauce (or Sriracha + Tony’s)
Blend oil, juice, etc. together. Add in corn, peppers, and onion. Yummy!
Could add cooked quinoa, millet, to add a little protein.
