Ingredients (everything’s approximate)
1 lb ground beef
1 pkg frozen shelled edemame (soy beans)
1 large can chopped tomatoes
1-2 cans kidney beans
1 can black beans
chili powder, garlic powder, salt (optional)
cheese and/or Greek yogurt to top when serving (optional)
Crumble the meat and cook until done. Drain. Add garlic powder if you wish.
In a large dutch oven or soup pan put in the contents of all the cans. Fill each can with water and add to the soup. Add in chili powder.
Cook around approx. 2 hours or until soup thickens up. Taste and add more chili, salt, pepper, etc. to meet your taste.
Serve. Add grated cheese or Greek yogurt on top.
